One thing I need to clear up is the pastrami is NOT made at M&amp;T. 
I would love to produce it myself and I could, however we buy it from a local company who brings it in from new york.   It is a great product, New York State is the company. 
We do prepare in house the turkey, smoked slamon, roast beef, pork BBQ, brisket BBQ, we cook the corned beef, all mayo, salad dressings, soups, stocks, jalapeño pickles and on and on. 
We are a from scratch kind of place but a great mentor taught me to pick and choose all your battles as far as this kind of thing, ie if someone makes great bacon and you use a lot if bacon buy it from some one who does it right (neuskies)!  Keep it consistant!
