Uncle Bubba's Oyster House

The Setting:  A charming restaurant on the edge of the salt marshes bordering Savannah on the way to Tybee Island.  Huge windows open to view the marshes in the daytime.

The Staff:  Incredibly friendly, but, some are more experienced than others.

The Food:  Amazingly Good!  We’ve visited on a few occasions and every time we have to order the chargrilled oysters.  They’re that good!  Served on the half shell, the raw oysters are topped with a bit of parmesan cheese, herbs and a drizzle of butter.  The bit of smoke perfectly compliments the oysters and their crust of cheese.  Garlicky breadsticks accompany this generous starter.  And, they’re the perfect medium to sop up the flavorful juices left in the shell.

We sampled a number of main dishes including the Fried Oysters, The Full Bubba, Shrimp & Grits, and Crab Stuffed Flounder.  All were studies in careful preparation, beautiful presentation, and subtle, delicate flavors.

Fried Oysters:  Coated in a delicate flour breading, they were cooked to perfection.  But, for those who like a cornmeal coating these might be a bit too delicate and lacking of the crisp bite added by the cornmeal.

The Full Bubba:  The most GINORMOUS  seafood platter I’ve ever seen!! Complete with fish, shrimp, scallops, and oysters offering the same delicate flour breading.  Even with nibbles being stolen, we couldn’t finish it all.  Also, boasting some of the BEST scallops we’ve ever tasted.  The scallops were so fresh (and perfectly cooked) that the sweet taste of the sea would burst in our mouths with every bite.  (The last time we tasted scallops this fresh we were in a dockside restaurant in Alaska.)

Shrimp & Grits:  Unusual, but, really really good.  The shrimp were swimming in a rich, creamy sauce that was dotted with peppers, onions, leeks (i think) and a fine dice of tomato.  The sauce had a hint of sweetness contributed by the leeks and sweet peppers.  While it wasn’t what we expected, it became more addictive with each bite.

Crab Stuffed Flounder:  I hate to repeat myself, but, it was cooked to perfection.  The delicate flounder dusted with herb butter was not overpowered by the crab stuffing making this a surprisingly light entree.  Incredibly addictive… making me crave another visit to the coast.

Stars of the Day:  EVERYTHING!!  But, the chargrilled oysters and perfect scallops deserve another mention.  I can’t remember the last time a restaurant surprised us so thoroughly with it’s stellar quality ingredients and excellent execution.  We can’t wait to go back to Savannah for more!
